As you can now buy our great meat in the Beefbar Butcher Shop, we decided we would give you a few tips & recipes to cook it at home !

HOUMOUS, BEEF CEVICHE WITH YELLOW CURRY
50 gr of Kobe beef short ribs
For the hummus
540 gr of chickpea
1 clove of garlic
1 tablespoon of mascarpone
90 gr of tahini
500 gr of chickpea water
salt & pepper
For the marinade
10 gr of yellow curry paste
7,5 gr of olive oil
0,2 gr of paprika
0,2 gr of ground cumin
3 gr of minced garlic
For the decoration
2 gr of mint
2 gr of coriander
5 pomegranate seeds
1/ Prepare the hummus with all of the ingredients in a thermomix at 90 degrees.
2/ Mix to get a smooth puree and strain twice through a sieve.
3/ Marinate the meat for 5 minutes with all of the ingredients.
4/ Rinse the meat with water and pat dry.
5/ In a skillet, melt a tablespoon of Kobe butter.
6/ Sear the meat, season with salt & pepper. Drain.
7/ Place the hummus on a plate, then the meat, the finely chopped herbs, and finish with mint oil, sumac and pomegranate seeds.
